The tea seeds brought from China by the monk Eisai were first cultivated here in the 13th century, and Uji tea remains the benchmark for quality, particularly for Matcha.

The Landscape of Tea
A tour often begins with a walk through the tea fields.
- The Black Canopies: You might notice fields covered with black nets or bamboo mats. This is the shading method used for Gyokuro (premium shade-grown tea) and Tencha (the raw material for Matcha). Blocking the sun forces the plant to produce more chlorophyll and L-theanine, creating the deep green color and savory Umami flavor unique to Uji tea.
Hands-On: Picking and Grinding
Many tea farms offer interactive experiences depending on the season.
- Tea Picking (Chatsumi): In May, during the first harvest (Shincha), you can dress in traditional tea-picker costumes (indigo kimonos with red sashes) and learn to pluck the “one tip, two leaves” that make the finest tea.
- Stone Mill Grinding: This is a year-round favorite. You use a heavy stone mill to grind dried Tencha leaves into a fine powder. You will realize how labor-intensive it is—grinding for 15 minutes might yield only enough powder for one or two cups! The aroma of the freshly ground tea is intoxicatingly fresh.
The Art of Brewing
The experience concludes with a lesson on how to brew the perfect cup.
- Gyokuro/Sencha: You learn that boiling water burns the delicate leaves. The water must be cooled to around 60°C-70°C to extract sweetness rather than astringency.
- Matcha: You will use a Chasen (bamboo whisk) to whip the powder and hot water into a frothy, jade-colored emulsion.
Sitting on a tatami mat, overlooking the Uji River or the Byodoin Temple (featured on the 10 yen coin), and sipping tea you processed yourself is a moment of pure Zen.
